Cookies!
I found a recipe for "healthier" cookies that I tried today and they turned out splendid. The only problem was that the recipe makes a ton. And, not realizing this, I doubled it. So I was baking cookies all day. Here's a picture of where I was about half-way through the day:
That's about 5 dozen. The final count was 8 dozen. And that is not including all the cookie dough that was lost (in my roommates' mouths) along the way.
I acquired the recipe at work but I had to make some substitutions. I found out after I started making them that I was about 4oz short of cream cheese and I also didn't have enough butter so I added some peanut butter. Which worked quite nicely as I usually prefer peanut butter in my cookies. I also substituted almonds for pecans because I like those better. So, I think that's reason enough to call the recipe my own!
I also want to point out that I had all intentions to run the "Race for the Cure" yesterday morning but, after arriving at the meeting point for my team, they all decided that we'd already done our part by paying to register and that we didn't really need to run. So we all went and ate breakfast tacos instead.
It wasn't my first choice. I honestly wanted to run!
And some people wonder why they're fat....
Have a great day :)

I HIGHLY doubt it was just into your roommate's mouths that the cookie dough disappeared. You have been known to eat tubs of cookie dough
Mmmmmm... I like cookies. Hey! You could be the Cookie Monster's new favorite friend! I really like the picture btw.
The cookies look great!
I'm going to have to demand for the recipe.
Though I'm not sure why you said that making a lot of cookies is a problem. That doesn't really make sense. ;) You can always put them in the freezer, and then pull them out when you realize you have 5 minutes to be somewhere and that you were supposed to bring food. Or pull them out for midnight snacks for the next month or so. Either option is good, I think.
Hope you enjoyed your tacos!
